The Role
Your main responsibilities include:
- Lead the everyday running of kitchen activities, including providing training, direction, and guidance to kitchen staff
- Ensure budget requirements are met by managing appropriate stock levels and discussing budget requirements with team
- Operate and manage company systems
- Coordinate kitchen staff roster as required and actively participate in recruiting new staff in collaboration with the leadership team
- Manage the performance of kitchen staff by actively participating in their performance appraisals in close coordination with the leadership team
- Menu design and engineering
- Understand and comply with all other relevant policies and procedures
- Monitoring quality of dishes at all stages of preparation and presentation
- Ensure that recipes and proportions are adhered to, to ensure consistency, quality and cost control
- Demonstrating techniques and advising on cooking procedures
- Preparing and cooking food to a consistently high standard
- Adhering to the food control plan and cleaning standards and processes within the kitchen
- Ensure all food is prepped and portion controlled prior to service to ensure no food prep is required to be completed during service
- Ensuring clear communication between the kitchen, front of house and management team
